The recipes and articles on this site are shared for general information, inspiration and the pleasure of cooking. They record how certain Danish dishes are traditionally prepared, including their generous use of butter and other animal fats. They are not, and are never intended to be, nutritional guidance, medical advice or a recommendation about what any particular person ought to eat.

Bodies, diets and health situations differ enormously. Allergens Hide in Plain Sight
Danish cooking leans heavily on dairy, eggs, wheat, rye, nuts and fish, all of which appear throughout our recipes and all of which are common allergens. Ingredient lists here describe the traditional dish; they do not account for your pantry. Always read the labels of the specific ingredients you buy, since formulations differ between brands and countries.
Every Kitchen Tells Its Own Story
Ovens run hot or cold, pans conduct differently, altitude changes boiling and baking, and two cooks following one page rarely plate identical dinners. Cooking times, yields and results published here are honest estimates from our own kitchen, not certainties for yours. Use your senses; they outrank our numbers.
On Raw and Undercooked Foods
Several traditional preparations involve raw flour, soft-set eggs or gently cooked fish. Consuming raw or undercooked ingredients can carry risk, particularly for young children, the elderly, pregnant women and anyone with a weakened immune system. Cook to the doneness that is safe for the people at your table, whatever tradition says.
